Easy Pavlova Strawberry and Almond Roll

Strawberry pavlova is a sensational dessert that looks difficult but in fact is super easy to make. We have been making rolled pavlovas since we were children. In fact we grew up next door to a strawberry farm where we had jobs picking strawberries. Weʼd come home with fresh strawberries and whip up a rolled pavlova in no time.

Strawberries and cream is a heavenly combination. Our other neighbour sold fresh cream. We would nip through the fence with a jar and watch while Mrs Nash turned the handle of a milk separator and poured fresh milk into it.

Somehow the milk and cream would separate and come out of different nozzles as milk and cream. Voilà! Fresh cream to go with our strawberries!

Making the meringue

Whisking egg whites for meringue takes about 10 minutes.

  • start the mixmaster off on a medium speed for a minute till the whites are foamy (see photo)
  • increase speed to high and start adding the sugar a tablespoon at a time
  • add sugar about 10 seconds apart and keep beating till all sugar is added
  • keep mixmaster beating on high for 8-10 minutes
  • rub a little meringue between your fingers
  • if you can still feel sugar keep beating till you can’t feel any sugar
  • mixture should be thick and very glossy

We now live in sunny Queensland where strawberries are widely grown. Right now is the start of the strawberry season and they are ridiculously cheap, so weʼll be pumping out some strawberry recipes like our delicious strawberry and vanilla jam. Delicious!

Easy Pavlova Strawberry and Almond Roll

Description

Crispy outer with a  sweet and soft marshmallow centre. Filled with juicy strawberries and freshly whipped cream. Devine and delicious. Easy strawberry pavlova is made in around 30 minutes. 


Ingredients

  • 4 large egg whites – room temperature
  • 1 1/2 cups caster sugar
  • teaspoon x 1 cornflour (cornstarch)
  • 1 teaspoon white vinegar
  • 2 teaspoons vanilla extract
  • 1/2 cup flaked almonds
  • 300 ml (10 fluid ounces) whipping cream
  • 2 punnet strawberries hulled and halved

Instructions

  • turn oven onto 350 f (180 c) on bake not fan
  • line a swiss roll pan 14 x 10 inches (35 x 25 cm) with baking paper
  • place egg whites into a clean mixmaster bowl
  • start mixmaster off on a medium speed for a minute till the whitest are foamy
  • increase speed to high and start adding sugar a tablespoon at a time
  • add sugar about 10 seconds apart and keep beating till all the sugar is added
  • keep mixmaster beating for 8-10 minutes
  • rub a little meringue between your fingers
  • if you can still feel the sugar keep beating till you can’t feel any sugar
  • mixture should be thick and glossy
  • spoon mixture into pan evenly and smooth the top with a spatula
  • sprinkle almonds evenly over the top
  • place in middle shelf of oven and bake for 12-15 minutes or until almonds are a light golden brown – keep a close eye on the meringue as all ovens are different
  • test with a skewer which should come out clean. If not pop back in the oven for a minute and then retest
  • there should be a very thin crust on the pavlova
  • remove cooked pavlova with baking paper onto a wire rack

  • spread a clean tea towel out on the bench
  • place two overlapping pieces of baking paper that is longer than the pavlova
  • turn cooled pavlova nut side onto baking paper
  • peel baking paper off gently
  • spread whipped cream over pavlova
  • top with strawberries 
  • lift tea towel and baking paper and gently roll away from you till you have a roll
  • twist ends of paper and tea towel and place in refrigerator
  • when ready to serve unroll towel and paper and gently lift onto a serving plate
  • serve and enjoy!
